I want to kick things off with a comment from my husband that I’ll never live down:
"This is basically as good as a chicken wing."
If you know him—and his aversion to anything green until recently—you'll understand why this is such high praise. But here we are, talking about cauliflower. Yes, cauliflower. And it’s not even my favorite thing to eat, but I can’t deny how incredible this dish turned out.
Last night, we served this as a side for our burgers, but it would work just as well as an appetizer. The cauliflower came out perfectly crispy, with just enough heat to keep things interesting. My husband was so impressed that he practically cleaned the tray!

### **The Recipe: Spicy Buffalo Cauliflower**
#### **Ingredients**
- 1 head of cauliflower
- **For the Batter:**
- 1/2 cup all-purpose flour
- 1/2 cup water
- A splash of hot sauce (optional)
- 1/4 tsp garlic salt
- 1/4 tsp dried onion
- **For the Buffalo Sauce:**
- 1/4 cup hot sauce
- 3 tbsp melted butter
- Pinch of salt

#### **Instructions**
1. Preheat your oven to 450°F (230°C).
2. Line a baking sheet with aluminum foil and lightly grease it with cooking spray.
3. Wash your cauliflower thoroughly, then chop it into bite-sized florets. I prefer smaller pieces because they crisp up better.
4. In a medium mixing bowl, whisk together the batter ingredients until smooth. The consistency should be thick—almost pancake-like.
5. Dip each cauliflower floret into the batter, ensuring it’s completely covered. Place the battered florets on the prepared baking sheet in a single layer without overcrowding.
6. Bake for approximately 15 minutes or until the batter hardens slightly.
7. While the cauliflower bakes, combine the buffalo sauce ingredients in a small bowl. Stir everything together until the butter is fully melted and mixed in.
8. Once the first round of baking is complete, take the cauliflower out of the oven. Using a pastry brush, generously coat each piece with the buffalo sauce, making sure every surface gets evenly covered.
9. Return the baking sheet to the oven and cook for another 5–7 minutes. By now, the cauliflower should be golden brown, crispy, and perfectly saucy.
10. Remove from the oven, let it cool for a couple of minutes, and serve immediately. For extra heat, pair it with additional buffalo sauce on the side. Ranch dressing is always a good call too—I personally can't resist dipping mine!
