The nutritional value of cowpea

An annual winding herbaceous plant, scientific name: Vigna unguiculata (Linn.) Walp, commonly known as carob, ginger, beans. Kidney beans are divided into two types: long kidney beans and rice bran, leaflets 3, and the terminal leaflets are oval-shaped oval, 5-13 cm long, 4-7 cm wide, and the tip is acute, the base is nearly round or wide-wedge, and both sides are glabrous. Lateral leaflets obliquely ovate; stipules ovate, ca. 1 cm, spreading into a short distance at the place of attachment. Calyx campanulate, glabrous; corolla lavender, ca. 2 cm long, with pale yellow hairs on upper part of style. The pods are linear and drooping, up to 40 cm in length. Flower and fruit period from June to September.

Main components

Seeds contain large amounts of starch, fatty oils, proteins, niacin, and vitamin B1.B2. Fresh kidney beans contain ascorbic acid (vitamin C) 22 mg.
