Analysis of the Meatball Forming and Cooking Line

    Zhucheng Xindeli Food Machinery Co., Ltd. is a leading manufacturer specializing in vacuum packaging machines and complete meat processing systems. With years of experience in the development and production of food packaging and meat processing equipment, the company has become a key player in China's food machinery industry. Since 2006, the company has developed a meatball forming and cooking line that has been widely adopted by meatball manufacturers. Through continuous innovation and improvement, it now offers performance comparable to similar domestic products.
The meatball forming and cooking line consists of three main components: the forming and cooking section, the cooling section, and the transmission system. (See attached diagram for details.)
In the forming tank and cooking tank, steam pipes are used to heat the water. The temperature is controlled using high-pressure valves, adjusting the steam supply to maintain around 75°C in the forming tank and about 90°C in the cooking tank. A hot water circulation pump ensures a steady flow of water, guiding the meatballs from the machine through the forming tank. By regulating the water flow, the speed of the meatballs is controlled, ensuring they reach the desired shape and consistency during the forming process.
Once formed, the meatballs move into the cooking tank, where they are cooked evenly. A rotating dial controls their movement through the tank, allowing the cooking time to be adjusted based on the type of meatball being produced.
After cooking, the meatballs are transported via a chain to the cooling tank. The cooling tank uses a continuous flow system, with cold water being added while hot water overflows, keeping the temperature between 20°C and 25°C. This rapid cooling prepares the meatballs for quick freezing, ensuring product quality and safety.
Food safety is a top priority in today’s food industry. By integrating this automated cooking line, meatball manufacturers can significantly reduce labor costs—especially important as labor expenses continue to rise. Additionally, it minimizes the risk of human error, resulting in fewer quality issues and safer, more reliable products for consumers.
This meatball forming and cooking line has already been implemented in five production lines at Shandong Jiashibo New Company, one of China’s largest meatball producers. Four more lines are currently being installed and commissioned.
