How to keep mushrooms fresh?

Fresh mushrooms are typically harvested with a high water content, which makes them highly perishable. To ensure their quality during storage and transportation, proper moisture control is essential. There are several effective methods to manage this. First, **drying** is a common technique. Fresh mushrooms should be placed on a sun-drying rack, with the caps facing upward and arranged evenly. The drying time varies depending on the season: in autumn and winter, it takes 3 to 6 hours; in spring, 6 to 7 hours; and in summer, just 1 to 2 hours. This helps reduce moisture while preserving the texture and flavor of the mushrooms. Another method involves using **hot air**. Mushrooms are spread evenly on a drying tray and placed inside a hot-air rotary kiln set at 40°C. This controlled environment allows for efficient dehumidification without damaging the delicate structure of the mushrooms. A third option is using a **dehumidifier**. After dehumidification, large packages should have a moisture content between 70% and 80%, while smaller packages can tolerate higher moisture levels, up to 80% to 90%. This flexibility ensures that different packaging needs are met without compromising quality. Once the mushrooms are properly dried, they are sorted and placed into baskets before being moved to a cold storage unit maintained at 1–4°C. Before shipping, they undergo grading, trimming, and weighing. They are then returned to cold storage for about two hours to stabilize before being packaged according to customer specifications, based on size and quality. When it comes to **shipping**, fresh mushrooms must be handled carefully. If the temperature is below 15°C, they can be transported in regular vehicles. However, when temperatures rise above this, refrigerated trucks (maintained at 1–3°C) are necessary to prevent spoilage. The shelf life of fresh mushrooms depends heavily on storage temperature: at 1°C, they can last up to 18 days; at 6°C, around 14 days; and at 15°C, only 7 days. The higher the temperature, the shorter the preservation period. By following these steps, the freshness and quality of mushrooms can be maintained throughout the supply chain, ensuring that customers receive the best possible product.
