Select high-quality soybeans that are all at the same stage of ripeness, fully matured, free from pests, and without any signs of rot or damage. This ensures uniformity in texture and flavor during the final product.2. Production Process
Once selected, the beans are soaked in a 2% saline solution for 30 minutes. The ratio of saltwater to soybeans is maintained at 2:1 to ensure even absorption. After soaking, rinse the beans thoroughly with clean water to remove excess salt. Next, they are briefly blanched in boiling water (between 90°C and 100°C) for 2 to 3 minutes. This step helps to deactivate enzymes and preserve the color and texture. Immediately after blanching, the beans are transferred to cold water to rapidly cool them down. The internal temperature of the beans must be reduced below 10°C before proceeding. Then, they are placed in a freezer and cooled to -30°C to ensure deep freezing. Once the beans reach a temperature of -18°C, they are carefully packed into sealed plastic bags. This method allows for long-term storage at -18°C, maintaining quality and freshness for an extended period. By following this precise process, the soybeans retain their nutritional value, texture, and flavor, making them ideal for various culinary uses. Whether used in soups, stews, or as a protein source, these frozen soybeans offer convenience and consistency.
